Delicious food! I’ve had an Indian 10 weekend cooking course from a biochemist (we worked at the same University) from Indian (you’d be surprised how easy it is to make saag paneer, other recipes not so much!) and eaten Indian food at restaurants in 5 US states including those on both coasts so I have some experience.
